Spice up your romance by surprising your sweetheart with a traditional Jamaican dish. No experience necessary. Pair it up with a candlelit dinner, wine (chicken goes great with white wine), rice, gungo (pigeon) beans, and salad.
Preparation time: 15 min Cooking time: 45 min
INGREDIENTS
• 1 lime, halved
• 1-1/3 tbsp cooking oil
• 1 medium chicken, halved or quartered (skin on)
• 2 tbsp pre-made bottled jerk seasoning*
*made of allspice, dried thyme, ginger powder, cinnamon, dried scallion, pepper, dried chili powder
DIRECTIONS
• Wash chicken with lime and water, and drain.
• Combine jerk seasoning and oil then rub into chicken. Our chefs at Couples suggest marinating for at least 2 hours or overnight for best results.
• Keep covered and grill or bake in oven at 375° for about 45 minutes.
There is a line in a John Mayer song that resonates with me and guides me in my efforts to embrace love and romance both personally and professionally. “I believe that my life’s going to see the love I give returned to me”.
I am not perfect nor am I an expert in love and romance however, since joining Couples Resorts in 2001, my passion for creating emotional connections between our guests, staff and our company cannot be denied. One of the most vivid testaments to this passion involves reading guests’ love letters over the phone and in person. Hundreds of Couples Resorts’ guests (past, present and future) regularly to submit letters along with dates and times to call their significant others. Typically, my call catches the person on the other end of the line completely off guard. Sometimes they are suspicious and ask something like “OK Joe, is that you?”, but mostly they are shocked and silenced as they listen to the love I am relaying from their significant other. The calls usually and end in tears of joy - often on both ends of the phone. I have called a Board Room to read a love letter over a speakerphone and a Nurses Station at a hospital, Rehearsal Dinners, and the Groom just before walking down the aisle. Newlyweds en route to the airport for their flight to Jamaica and to our resort rooms, including one to a wake up the Groom-to-be. I get such joy from these calls. My life is already seeing the love I give returned to me.
